RECEPT: Ontbijt met Geroosterde Champignons, Spiegelei en Oude Kaas

Ingredients

Mushrooms exposed to sunlight for 30 minutes beforehand can, according to research, contain up to 10x more vitamin D2. Combine them with eggs (vitamin D3) and aged cheese (a small amount of vitamin D) for a breakfast with vitamin D.

Quick info

  • Servings: 1 serving
  • Preparation time: 5 min + 30 min sun
  • Total time: 15 minutes

Ingredients list

  • 200 g mushrooms (cremini or brown), sliced
  • 2 eggs
  • 30 g aged Gouda or Parmesan, grated
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Handful of parsley
  • Pinch of black pepper, salt
  • Optional: 1 slice of whole-wheat bread

Preparation

  1. OPTIONAL — for more vitamin D: place the mushrooms in direct sunlight for 30 minutes (cut side up).
  2. Heat olive oil in a pan over medium heat.
  3. Sauté mushrooms and garlic for 5-7 minutes until golden brown.
  4. In the same pan, fry two eggs sunny-side up.
  5. Plate everything, sprinkle with grated cheese, parsley, salt, and pepper.

Why this recipe fits the 'Bones' theme

Mushrooms exposed to sunlight can provide 200-1,000 IU of vitamin D2 per 100 g — one of the few plant-based sources. Eggs provide ~50 IU of D3 per egg. Aged cheese adds a small amount of vitamin D. Vitamin D contributes to the maintenance of normal bones.

Tips & Variations

  • Vegan: replace eggs with tofu scramble + vegan D3 supplement
  • Variation: add a handful of spinach during the mushroom step
  • For families: make a larger portion and serve with bread
