RECIPE: Vegan Bowl with Tempeh, Nutritional Yeast and Quinoa

A vegan bowl that brings together five nutrients that deserve extra attention in a vegan diet: B vitamins (fortified nutritional yeast), iron (tempeh and spinach, with vitamin C alongside), magnesium (pumpkin seeds), protein (quinoa and tempeh) and healthy fats (tahini).

Ingredients 

  • 150g tempeh, diced
  • 60g quinoa (cooked)
  • 100g spinach
  • 1/2 avocado, sliced
  • 30g pumpkin seeds
  • 2 tbsp nutritional yeast (B12 fortified – check label)
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • Juice of 1/2 lemon (vit C for iron absorption)
  • Tahini dressing: 1 tbsp tahini + 1 tsp lemon juice + salt

Preparation

  1. Fry the tempeh cubes until golden brown in olive oil. Add soy sauce in the last minute.
  2. Sauté the spinach briefly (30 sec) in the same pan after the tempeh.
  3. Arrange the bowl: quinoa as a base, then the tempeh, spinach, avocado.
  4. Sprinkle pumpkin seeds and nutritional yeast over it.
  5. Drizzle tahini dressing over it and squeeze lemon juice over it for vitamin C.

Why this recipe fits

Nutritional yeast (fortified Engevita) provides B12, folate and other B vitamins. Tempeh and spinach provide iron; the vitamin C in the lemon juice increases iron absorption. Pumpkin seeds provide magnesium and zinc. Tahini adds calcium.

Tips & variations

  • For extra protein: add a second serving of tempeh (total 50g protein)
  • Variation: replace tempeh with black beans + walnuts
