What is bone broth?

Bone broth is broth simmered for a long time (12-48 hours) from animal bones and connective tissue. It contains collagen, gelatine, glycine, proline and minerals such as calcium and magnesium. Bone broth differs from regular stock in its long simmering time, which makes it set into a gel when it cools.

Preparation consists of simmering bones — often combined with marrow, cartilage and connective tissue — in water with a little vinegar (to release the minerals) and vegetables. This is done over a very low heat, sometimes for 48 hours for beef. The result: a gel-forming broth rich in dissolved proteins and minerals.

Bone broth has existed for thousands of years. In Jewish tradition, chicken soup symbolises comfort and strength. In France, fond forms the basis of the whole of haute cuisine. Scientific background

Bone broth is first and foremost a food: it provides protein, amino acids (glycine, proline, glutamine) and minerals. For protein there are authorised EFSA claims, provided at least 12% of the energy comes from protein — with bone broth powder (about 9 g protein to about 40 kcal per scoop) this is amply the case:

Glycine, proline and glutamine are also being researched in the context of connective tissue and the gut wall; bone broth is mainly valued as a nutritious, protein-rich base for soups, sauces and a warm mug.

What is in bone broth?

Collagen and gelatine: During the long simmering, collagen is converted into gelatine.

Glycine: The amino acid that makes up 10-15% of bone broth protein.

Proline: The second dominant amino acid (~10%). A building block of collagen.

Glutamine: An amino acid that gut wall cells use as fuel.

Minerals: Calcium, magnesium, phosphorus and potassium from the bones.

How do you use bone broth?

A simple basic approach in five steps:

  1. Heat 250 ml water to just below boiling point.
  2. Put 1 scoop (10 grams) of bone broth powder in a mug.
  3. Pour in the water and stir well until fully dissolved.
  4. Optionally add sea salt, pepper and fresh herbs.
  5. Drink immediately or use as a base for soup / risotto / sauce.

  • 250 ml hot water (just below boiling point)
  • 1 scoop (10 grams) beef bone broth powder
  • Pinch of sea salt (if desired)

  2. Stir in the bone broth powder until fully dissolved.

Myths and misconceptions about bone broth

Myth 1: "Bone broth is a miracle cure for your gut."

Scientific evidence for a specific gut-repairing effect is limited. Bone broth is a food, not a medicine.

Myth 2: "Bone broth and stock cubes are the same."

Incorrect. A stock cube is mainly salt and flavouring. Bone broth powder is genuinely reduced broth — with collagen, minerals and amino acids.

Myth 3: "Vegetarians can use bone broth too."

Bone broth is by definition of animal origin. Plant-based variants ("vegan broth") exist but contain no collagen.
