RECIPE: Immune-Boosting Broth with Shiitake, Maitake, and Reishi

A warming broth full of medicinal mushrooms for immune modulation. Shiitake and maitake provide beta-glucans, reishi adds adaptogenic action. Cumin, ginger, and garlic for warmth and extra immune support.

Ingredient list 

  • 200 g fresh shiitake (sliced)
  • 100 g maitake (or regular mushrooms as an alternative)
  • 1 onion, chopped
  • 3 cloves garlic
  • Piece of ginger (3 cm), grated
  • 1 tablespoon sesame oil
  • 1 liter vegetable broth
  • 2 tablespoons soy sauce
  • 1 spring onion, chopped
  • Juice of 1/2 lime
  • Optional: 100 g rice vermicelli or soba noodles

Preparation

  1. Heat sesame oil in a soup pot, sauté onion, garlic, and ginger for 3 min.
  2. Add shiitake and maitake, cook for 5 min until soft.
  3. Add broth, bring to a boil, then simmer for 15 min.
  4. Add reishi powder and soy sauce in the last 5 min.
  5. Optional: add noodles and cook for 3 min.
  6. Serve in bowls, garnish with spring onion and lime juice.

Why this recipe fits

Shiitake contains lentinan (a specific beta-glucan for immune support). Maitake provides D-fraction. Reishi is an adaptogenic mushroom that supports both immunity and relaxation. Garlic and ginger are classic immune-supportive foods.

Tips & variations 

  • For extra protein: add poached egg or tofu
  • Variation: add miso for extra umami
  • For 50+: combine with Vitals AHCC supplement
