RECIPE: Vitamin D Power Breakfast, Roasted Mushrooms with Fried Egg and Aged Cheese

Mushrooms that you expose to sunlight for 30 minutes beforehand can contain up to 10x more vitamin D2. Combine with eggs (D3) and aged cheese (D2) for a complete vitamin D breakfast.

Ingredients list 

  • 200 g mushrooms (cremini or brown), sliced
  • 2 eggs
  • 30 g aged Gouda or Parmesan, grated
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Handful of parsley
  • Pinch of black pepper, salt
  • Optional: 1 slice of whole-wheat bread

Preparation

  1. OPTIONAL — for maximum vitamin D: place the mushrooms in direct sunlight for 30 minutes (cut side up).
  2. Heat olive oil in a pan over medium heat.
  3. Sauté mushrooms and garlic for 5-7 minutes until golden brown.
  4. In the same pan, fry two eggs sunny-side up.
  5. Plate everything, sprinkle with grated cheese, parsley, salt, and pepper.

Why this recipe fits the 'Bones' theme

Sun-exposed mushrooms provide up to 200-1000 IU of vitamin D2 per 100g—one of the few plant-based sources. Eggs provide ~50 IU of D3 per egg. Aged cheese adds some D2.
