A meal-prep approach for stressful Q4 weeks. 45 minutes on Sunday = 5 nutritious lunches for the work week. Quinoa base, roasted vegetables, protein source, healthy fats. No more lunch stress during the day.

Ingredients list

  • 300 g quinoa (raw)
  • 2 sweet potatoes (400 g total), diced
  • 1 broccoli, cut into florets
  • 1 bell pepper (red + yellow), cut into strips
  • 1 zucchini, sliced
  • 300 g chickpeas (canned, rinsed) or 5 hard-boiled eggs
  • 100 g feta or goat cheese (optional)
  • 30 g pumpkin seeds
  • Olive oil, salt, pepper, turmeric, paprika powder
  • Tahini-lemon dressing (store separately): 4 tbsp tahini + 4 tbsp lemon juice + 4 tbsp water + salt

Preparation

  1. Preheat oven to 200°C.
  2. Cook the quinoa according to package instructions (approx. 15 min).
  3. Chop all vegetables, drizzle with olive oil + herbs, divide among 2 oven dishes, roast for 20-25 min.
  4. Meanwhile, fry chickpeas or prepare eggs.
  5. Divide quinoa, roasted vegetables, proteinand cheese among 5 meal prep containers.
  6. Sprinkle pumpkin seeds over top.
  7. Prepare dressing separately and store in 5 small bottles (add before eating — prevents soggy salad).

Why this recipe works

Plant-based protein (quinoa + chickpeas) provides ~25g protein per lunch. Varied vegetables for antioxidants and fiber. Tahini provides calciumand magnesium. Pumpkin seeds for zinc. Meal prepping once a week = stress management throughout the week.
