RECIPE: Gut-Brain Bowl with Kimchi, Tempeh and Quinoa

A bowl filled with natural probiotic sources for your gut-brain axis. Kimchi (fermented cabbage), tempeh (fermented soy), miso dressing – three different fermentations, each providing its own probiotic strain.

Ingredients 

  • 60g quinoa (cooked)
  • 150g tempeh, diced
  • 100g kimchi
  • 1/2 cucumber, sliced
  • 1/4 carrot, grated
  • 1 sweet potato (cooked), diced
  • 1 spring onion, chopped
  • 1 tbsp sesame seeds
  • Miso dressing: 1 tsp white miso + 1 tsp rice vinegar + 1 tsp sesame oil + 1 tsp honey

Preparation

  1. Cook the quinoa and sweet potato cubes.
  2. Fry the tempeh until golden brown in a pan with some soy sauce.
  3. Assemble the bowl: quinoa as the base, topped with tempeh, kimchi, cucumber, carrot, and sweet potato.
  4. Sprinkle with sesame seeds and spring onion.
  5. Drizzle with miso dressing.

Why this recipe works

Three different fermentations provide a diverse mix of probiotic strains — diversity is a strong marker of gut health. Tempeh adds B vitamins (B12for neurotransmitter production). Miso provides umami plus extra probiotics. A complete gut-brain bowl.

Tips & variations 

  • For extra protein: add a poached egg
  • Variation: replace kimchi with sauerkraut for a milder taste
  • For stress + gut: combine with a magnesium supplement
