RECIPE: Vegan Power Bowl with Tempeh, Nutritional Yeast, and Quinoa

A vegan bowl that covers the 5 most important nutrients for vegans (see blog June #3): B vitamins (fortified nutritional yeast), iron (tempeh + spinach + vit C cofactor), magnesium (pumpkin seeds), protein (quinoa + tempeh), healthy fats (tahini).

Ingredients 

  • 150g tempeh, diced
  • 60g quinoa (cooked)
  • 100g spinach
  • 1/2 avocado, sliced
  • 30g pumpkin seeds
  • 2 tbsp nutritional yeast (B12 fortified – check label)
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • Juice of 1/2 lemon (vit C for iron absorption)
  • Tahini dressing: 1 tbsp tahini + 1 tsp lemon juice + salt

Preparation

  1. Fry the tempeh cubes until golden brown in olive oil. Add soy sauce in the last minute.
  2. Sauté the spinach briefly (30 sec) in the same pan after the tempeh.
  3. Arrange the bowl: quinoa as a base, then the tempeh, spinach, avocado.
  4. Sprinkle pumpkin seeds and nutritional yeast over it.
  5. Drizzle tahini dressing over it and squeeze lemon juice over it for vitamin C.

Why this recipe fits

Nutritional yeast (fortified Engevita) provides B12, folic acid, and other B vitamins. Tempeh is fermented, thus providing more bioavailable iron. Spinach adds even more iron – lemon juice (vitamin C) greatly improves absorption. Pumpkin seeds provide magnesium and zinc. Tahini adds calcium.

Tips & variations 

  • For extra protein: add a second serving of tempeh (total 50g protein)
  • Variation: replace tempeh with black beans + walnuts
  • For 50+: combine with a B12 supplement
